Slice a banana lengthways (leave the skin on). Stuff with chocolate chips and mini marshmallows and wrap tightly in foil. Place in the coals for 10–15 minutes. Take care when opening, as these come out hot and seriously gooey.

Whisk together the flour, egg, milk and butter or oil in a bowl until you’ve got a smooth batter, then preheat your camp BBQ or hotplate to a medium heat and lightly grease the surface. Pour small rounds of batter onto the hotplate and, once bubbles start to appear on the surface, sprinkle chocolate chips or place a square of chocolate into the centre of each pancake. Flip carefully and cook until golden and fluffy, with the chocolate melted and gooey inside, then serve hot straight off the plate with maple syrup, berries or a dusting of icing sugar.
