Method
-
Set all burners to high and preheat for 10 minutes – if using a Weber Q, set up your convection tray and a trivet.
-
Lightly oil your steaks and season with salt & pepper.
-
Adjust the barbecue to boost or high and gently lay the steaks across the grill, giving them a quick press to ensure thorough contact.
-
Close the lid and let them sear. Then, flip the steaks and close the lid again. Continue to cook until desired doneness.
-
Once the steak is cooked, leave to rest before serving with your favourite sides.
For achieving your desired doneness, the following temperatures should be a good guide: Rare: 49°C, Medium Rare: 54°C, Medium: 60°C, Medium Well: 66°C, Well Done: 68°C.
And there you have it – perfectly seared steaks, straight from the barbecue, with minimal fuss and maximum flavour. With a hot grill, a good cut of meat, and a few simple steps, you’re well on your way to steakhouse-quality results at home. So, fire it up, keep it simple, and enjoy the sizzle!
